Nothing says Saint Patrick’s Day more to me than corned beef and cabbage and Irish soda bread.

However, I had been racking my brain trying to come up with a “lucky” recipe that my daughter would enjoy.

Last week was Dr. Seuss week at her school so they made green pancakes in honor of Green Eggs and Ham.

Shamrock pancakes!!

Now I could have just tinted boxed pancake mix with green food coloring, but that would have been cheating. (That and we were out.)

I used my go-to recipe for fluffy pancakes. This shamrock pancake recipe came out so good I’m going to have to play around with other colors and shapes.

I love this recipe because it’s so easy to whip up and I always have all the ingredients at home.

 

In a large bowl pour 3/4 cup milk and add in 2 tablespoons white vinegar. You’re basically making your own buttermilk, but cheaper.

Don’t be scared, the milk will look curdled. Let it sit for 5 minutes.

In another bowl whisk together 1 cup flour, 2 tablespoons sugar, 1/2 teaspoon baking soda, 1 teaspoon baking powder, and 1/2 teaspoon salt.


Mix 1 egg and 2 tablespoons melted butter into the milk mixture.

Stir in 4 drops of green food coloring. I ended up adding 3 more drops after I mixed the flour in because it wasn’t green enough for me. If you want a greener shamrock pancake add in a total of 7 drops green food coloring.

Gradually whisk the flour mixture into the milk mixture. Whisk until combined.

There may be some small lumps left which is okay. Avoid over mixing which can make for a tough pancake.

Heat your griddle pan over medium heat. Spray with cooking spray or coat with a pat of butter.

Once heated drop 3 scoops of shamrock pancake batter next to each other to form a shamrock shape. Make a little stem like below.

Once bubbles start to form flip over and cook until browned on the other side.

I also tried piping a shamrock pancake using a Ziploc bag. Next time I’m going to use a squeeze bottle so I can make shapes with more detail since the pancake batter came out very fast with the bag.

I like the outline that piping the batter gave to the shamrock pancake, but next time I’m going to make sure I lower the heat to maintain the green color. This shamrock looks like it was out in the sun too long.




We also made some plain green pancakes with rainbow colored sprinkles.

SHAMROCK PANCAKE RECIPE

Inspired by Allrecipes fluffy pancakes recipe

 

Ingredients

3/4 cup milk

2 tablespoons white vinegar

1 cup flour

2 tablespoons sugar

1/2 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 egg

2 tablespoons melted butter

7 drops green food coloring or color of your choice

 

1) Pour milk and white vinegar into a large bowl. Stir together and let sit for 5 minutes.

2) In another bowl whisk together the dry ingredients.

3) Whisk the egg and melted butter into the milk mixture. Stir in the food coloring.

4) Gradually whisk the flour mixture into the milk mixture until combined. Do not over mix.

5) Heat griddle pan over medium heat. Spray with cooking spray or coat with a pat of butter. Pour/pipe shamrock shapes onto pan. Once bubbles form flip over and cook other side until browned.

If you have a picky eater make them their favorite shapes and they’ll eat them right up.
