Sprinkles + Cookies = Deliciousness

 

Just look at these sprinkle cookies. I’m so critical of my own baking, but I can say these came out perfect! They were soft, flavorful, and very easy to make.

Whenever I go to the bakery I get myself Italian sandwich cookies and rainbow cookies, black and white cookies for my husband, and sprinkle cookies for the kids.

 

I stumbled across Smitten Kitchen’s confetti cookies and they were gorgeous. Unlike other sugar cookie recipes hers had cream cheese in it. I decided to give it a go and I’m so glad I did.

 

My kids thought they were just fine, but everyone at my work LOVED them. The cream cheese adds a nice tang and keeps them soft for several days.

 

 

MAKING SPRINKLE COOKIES

 

 

Preheat your oven to 375 degrees Fahrenheit. Line 2 baking sheets with parchment paper. I use a silicone baking mat (every baker should have one) because its reusable and cheaper.

 

In a large bowl whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon baking soda, and 3/4 teaspoon salt.

 

In another large bowl cream together 1 cup butter, 1/4 cup cream cheese, and 1 1/4 cups sugar.

 

Once blended together add in 1 large egg, 2 teaspoons vanilla extract, and 1/4 teaspoon almond extract (optional).

Add in the flour mixture and mix just until combined.

 

The dough may be very soft at this point. If it is you can put it in the refrigerator for 20 minutes or so to harden up and make it easier to scoop.

What makes these sprinkle cookies look professional is making them all the exact same size. This was easy for me using my cookie scooper, but you can do it by hand too.

Scoop the dough into balls a little bigger than the size of a walnut and roll them into rainbow sprinkles until completely covered.

 

Using a glass press the balls down until they are 1/2″ to 1/4″ tall.

 

Place them on your baking sheets/silicone mats about 2″ apart from each other.

Bake the sprinkle cookies in the oven for 9 to 10 minutes until lightly golden underneath. This ensures you’ll have super soft cookies once they cool. If you want them crispy bake them an extra minute or two.

 

Let sit on the baking sheets for 2 minutes then transfer the sprinkle cookies to wire cooling racks.

The finished sprinkle cookies are soft and last about 3 days in an airtight container. I think they would last longer than that, but we ate them all before then 😉

 

 

SUPER SOFT SPRINKLE COOKIE RECIPE

Adapted from Smitten Kitchen

 

 

INGREDIENTS

 

3 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

3/4 teaspoon salt

1 cup (2 sticks) butter

1/4 cup cream cheese

1 1/4 cups sugar

1 large egg

2 teaspoons vanilla extract

1/4 teaspoon almond extract

1 1/2 cup rainbow sprinkles

 

 

1. Preheat oven to 375 degrees Fahrenheit. Line two baking sheets with parchment paper or silicone mats.

2. In a large bowl whisk together the all-purpose flour, baking powder, baking soda. and salt.

3. In another large bowl cream together the butter, cream cheese, and sugar. Once blended together add in 1 large egg, 2 teaspoons vanilla extract, and 1/4 teaspoon almond extract (optional).

4. Add the flour mixture into the cream cheese mixture and blend just until combined. Put softened sprinkle cookie dough into refrigerator for 20 minutes to make it easier to scoop.

5. Scoop cookie dough into balls a little bigger than a walnut and roll into the bowl of rainbow sprinkles until the ball is completely covered. Place balls onto cookie sheets 2 inches apart. Using a glass press cookies down until they are 1/2″ to 1/4″ tall. Continue with remaining dough.

6. Bake cookies in the oven for 9 to 10 minutes until lightly golden underneath. Let sit on the baking sheets for 2 minutes then transfer to wire cooling racks.

These sprinkle cookies are great for every occasion. Christmas, birthdays, Saint Patrick’s Day, party favors, and cookie exchanges.

  3. The cream cheese kept these cookies soft for days.I used to have the same problem with snickerdoodles too. I think the key with those is making sure the dough is cold and not over baking them.
